Watermelon Agua Fresca
A vivid, barely sweet cooler of blended watermelon brightened with lime and mint.

Ingredients
- 8 cups Blacktail Mountain watermelon, cubed
- 2 cups cold water
- 1/4 cup lime juice
- 2 tbsp sugar
- 1/4 cup fresh mint leaves
- 2 cups ice, for serving
Method
- Cube the watermelon and drop it into a blender with the cold water.
- Add the lime juice, sugar, and mint leaves.
- Blend on high until the mixture is completely smooth.
- Pour the blend through a fine sieve into a pitcher to catch any pulp.
- Taste and stir in a little more sugar or lime if it needs it.
- Serve over plenty of ice with a sprig of mint.
The deep-red, thin-rinded flesh of a Blacktail Mountain blends into a vivid sweet cooler with almost no waste. Because the rind is so thin and the sweet flesh so full, nearly the whole melon goes into the pitcher. A little lime and mint sharpen that natural sugar into a drink as bright in color as it is in flavor.
