Stuffed Banana Peppers

Ingredients

  • 8 large banana peppers, halved lengthwise
  • 1/2 pound bulk Italian sausage
  • 8 ounces cream cheese, softened
  • 1/2 cup grated Parmesan
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • 1 garlic clove, minced
  • 1 tablespoon olive oil

Method

  1. Heat oven to 375°F (190°C) and oil a baking dish.
  2. Brown the sausage in a skillet over medium heat, then let it cool a little.
  3. Stir the sausage together with the cream cheese, Parmesan, parsley, basil, and garlic.
  4. Scoop out the seeds from the pepper halves and spoon in the filling.
  5. Set the peppers snugly in the dish and drizzle with olive oil.
  6. Bake for about 30 minutes, until the peppers are soft and the tops are golden.

Notes

Mild and sweet with a sturdy wall, banana peppers are a friendly, kid-safe pepper to stuff — there is no heat here to tame. The wall holds its shape in the oven so the filling stays put instead of spilling out. Even folks who shy away from spicy food will happily clean their plate.
