Watermelon Feta Salad

Ingredients

  • 6 cups Blacktail Mountain watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint, torn
  • 1/2 small red onion, thinly sliced
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1/2 tsp flaky salt

Method

  1. Cube the watermelon and pile it into a wide shallow bowl.
  2. Soak the sliced red onion in cold water for five minutes, then drain to soften its bite.
  3. Scatter the drained onion and crumbled feta over the melon.
  4. Whisk the lime juice and olive oil together and drizzle it across the bowl.
  5. Tear the mint over the top and finish with a pinch of flaky salt.
  6. Serve cold and soon, before the melon gives up its juice.

Notes

Blacktail Mountain is a small icebox melon with flesh that runs intensely sweet and crisp. That deep sweetness is exactly what the salty feta and cool mint play off, each bite swinging between sugar and salt. Because the melon holds its crunch, the cubes stay firm in the bowl instead of going slack.
