Broad, heart-shaped, and deep green, this is the poblano — and once dried, the ancho of Mexican cooking. Fresh, it is mild and meaty, ideal for roasting, peeling, and stuffing. Ripened red and dried it turns dark and wrinkled with a deep, sweet, raisin-like flavor.
