The everyday chile — enough heat to matter, not enough to overwhelm. Picked green it is sharp and grassy; left to ripen red it rounds out and sweetens. Remove the seeds and ribs to tame it, or leave them in for the full kick. Superb fresh, pickled, or smoked into chipotle.
