Perhaps the most celebrated heirloom tomato of all, Brandywine is an Amish variety dating to the 1880s. The large, slightly ribbed pink fruit have a deep, complex flavor that modern hybrids chase but rarely match. A single thick slice with salt is a meal in high summer.
